200 Miles in 37 Days!

Guess what?  I completed 200 Miles in 37 Days!!!  Back on July 18th I challenged myself to run and walk 100 miles by August 28th.  I reached my 100 mile goal on August 7th, hit 150 on August 15th, and ran through my 200th mile on August 23rd.  After today’s 5.6 mile run I’m at 214 miles total with 2 days still left to go in my original challenge!

Miles since last post:  113.6
Days since last post:  19
Days until Deadline: 2
TOTAL MILES: 214.7

If you had told me in mid-July when we got our treadmill that I would soon be averaging over 5 miles a day I would have laughed (or actually cried) at the thought of it.  I started out slow with some 2-3 mile days in the beginning and a lot more walking than running but as the weeks have gone by running has gotten easier and I have even had a few 7+ mile days!  I’ve continued to track my progress on my Excel graph and I’ve also started to track my best treadmill times for 1, 2, 3, and 4 miles.  I’m not ready to go out and run a race or anything, but I’m still pretty proud of how my times have fallen during the past month.

Top Treadmill Times 8-26-13

So where do I go from here?  Forward!  I’m going to keep tracking my miles and I will continue to set mini mileage goals for myself since that has worked thus far to keep me motivated.  I’ve now decided that when I hit 250 miles I get to buy these Athleta running tights for myself.  They will be just in time for the Fall weather that I hope September brings next week!

Running....!

The Perks of a Winery Wedding (Wedding Photo of the Week)

One of my favorite moments of our wedding day was when Matt and I slipped away from our reception and spent a little time together in Grace Winery’s vineyard at sunset.  Our photographer, Melissa Hassey, captured the moment through the grape vines:

Matt and Annie in the Vineyard

Getting married at a winery had some awesome perks.  We attended wine tastings, our friends relaxed in the vineyard sipping wine before our wedding started, and, of course, everyone enjoyed drinking the locally made wines at the reception!

Matt and I shared bottles of Grace Winery’s 2012 Pinot Gris (pictured above left) with our bridal party before the ceremony.  This freshly bottled Pinot Gris was light, refreshing and perfect for a warm June afternoon.  We also served Grace Winery’s oaky 2010 Reserve Chardonnay (my personal favorite) and a sweet and slightly smoky 2012 red that was so new it didn’t yet have an official name!

Grace Winery is about 3 miles from our house and they have tastings every weekend so we look forward to trying new vintages in the future!  We’ll definitely have to get a bottle or two for our first anniversary next June.  🙂

If you ever find yourself in Philadelphia’s western suburbs yearning for a glass of wine make sure to check out Grace Winery!  Their tasting room is open nearly every weekend and the barn, vineyard, and surrounding farmlands are beautiful.  Grace Winery at Sweetwater Farm, 50 Sweetwater Road, Glen Mills, PA 19342; 610-459-4711.

Mexican Pizza

I love pizza and I LOVE nachos so tonight I decided to combine these two culinary delights into one delicious meal: Mexican Pizza!  I made up the recipe as I went along and, after sinking his teeth into the first sausage-y, cheesy, tomato-y bite, Matt declared that this pizza was my best-ever made up recipe of all time!

Mexican Pizza!

The ingredients are simple: pizza dough, cheese, and your favorite nacho or taco toppings.  I used fire-roasted corn, beans, red onions, green onions, jalapeños (from our garden), cherry tomatoes (also from the garden!), and sausage that was crumbled and cooked with a bit of taco seasoning.  The sausage that we had on hand was actually bratwurst which obviously isn’t the most Mexican of sausages but it ended up tasting just fine.  If I was going to plan for making this again I’d try some nice fresh chorizo sausage instead.  Yum!

Mexican Pizza

Annie’s Mexican Pizzaa The Little GSP original!

You will need…
1/4-1/2 cup Corn (I used frozen corn)
1-2 Jalapeño Peppers, sliced into thin rounds
2 Fresh Sausages, casings removed and roughly chopped/crumbled (I’d recommend Chorizo or Italian Sausage)
1-2 teaspoons Taco Seasoning (optional; good if you’re using a mild sausage like bratwurst!)
1 package fresh Pizza Dough
1/4 cup Red Onion, finely chopped
1/4 cup Black Beans, rinsed and drained (about a quarter of a 15 oz. can)
8-10 Cherry Tomatoes, halfed
2-3 handfuls shredded Mozzarella
1-2 handfuls shredded Mexican Cheese Blend
Sliced Green Onions, to garnish
Cholula Hot Sauce, to taste
Sour Cream, to taste

Directions:
Heat a skillet (I used my wok) over medium high heat and add the frozen corn.  Allow the corn to thaw and then dry roast in the pan for approx. 10 minutes, stirring occasionally, until the corn is starting to blacken slightly.  Transfer the roasted corn to a bowl and set aside.  Put the sliced jalapeños into the hot skillet and roast for 10 minutes, stirring occasionally, until the pepper slices start to soften.  Transfer the jalapeños to a bowl and set aside.

Add the crumbled sausage to the hot skillet and spread it out in one layer on the bottom of the pan.  Allow to brown for 2-3 minutes, then stir the sausage frequently until browned and fully cooked.  If using a mild sausage (or if you want an extra kick), stir in the taco seasoning.  Transfer the cooked sausage to a paper towel-lined plate and set aside.

Preheat the oven to 500°F and, if you’re using one, allow your pizza stone to heat up in the oven.  Prep the pizza dough according to the package instructions.  I used a package of fresh Trader Joe’s pizza dough and made a 12-14″ pizza on our new pizza peel.  I used flour to keep the pizza from sticking to my hands and stretched it out in all directions without over-handling it.  If you are making two pizzas and/or don’t have a peel, just split up the dough and shape it to fit on a greased cookie sheet.  (For more information on how I stretch pizza dough, check out my Homemade TBM Pizza recipe.)

Uncooked Mexican Pizza

Now here’s the fun part… building your Mexican pizza!  I started with a sparse sprinkling of red onion followed by a bit of Mozzarella, a scattering of black beans and a generous helping of roasted corn.  Then I added a thin, even layer of Mozzarella over the whole pizza before spreading all of the crumbled sausage onto the pie.  After a final sprinkling of Mozzarella I added on the cherry tomatoes, jalapeños, and a few more bits of red onion.  Finally, I topped off the pizza with a little shredded Mexican Cheese Blend to give it some nice color.

Bake your Mexican Pizza in the 500°F oven for 10-12 minutes or until the crust is puffed and fully cooked.  If using a pizza stone, you’ll have to transfer the uncooked pizza from the pizza peel onto the hot stone in the oven (a skill that we’re still working on!) and then slide the fully cooked pizza back on the peel to be cut.  Sprinkle the chopped green onion over the top of the pizza, slice the pizza, and serve with hot sauce and sour cream.  Enjoy!

Wedding Photo of the Week!

Matt and I got our wedding photos back from our fantastic wedding photographer, Melissa Hassey, and I thought it would be fun to share one each week.  Here’s one of my favorites:

Wedding Photo Wednesday! Matt, Annie and Bailey (Photo by Melissa Hassey Photography - www.melissahassey.com)

I love how Matt and Bailey are making eye contact in this shot!  Bailey wasn’t being the best behaved wedding dog at this point in time so Matt was having a little talk with her about sitting still for the camera.  🙂

On another note, thank you to everyone that has voted for Bailey in the Yakima Photo Contest!  Bailey is one of 10 finalists in the contest and you can vote once a day.  Please consider voting now for Bailey… she’s neck and neck with another photo for the lead spot right now and I appreciate any and all votes!!

Please click to vote for Bailey!

To vote for Bailey, please click here and hit “VOTE”.   You don’t need to have facebook or share any personal information in order to vote.  Thank you!!

Weekly Photo Challenge AND Bailey is a Finalist in a Photo Contest!

First of all, I just learned that this photo of Bailey has been chosen as a Grand Prize Finalist in a photo contest! The winner is determined by popular vote which means that YOU can help Bailey win simply by clicking here and then hitting the “VOTE” button.

Please click to vote for Bailey!

I would REALLY appreciate it if you could take a few seconds to vote! Voting is open until August 16th and you can vote once per day. The contest is sponsored by Yakima Racks and the winner receives gifts from Ruffwear (Bailey’s favorite dog gear outfitter), Zukes (Bailey’s favorite treats!) and a $500 Yakima gift card!

In other news, this week’s WordPress Weekly Photo Challenge is One Shot, Two Ways. The idea behind this challenge is to show the same subject from two angles and I have a fun example to share. The following two photos show Bailey flying through the air about to catch her duck. They were taken from two different cameras at the exact same moment during the same jump. Cool, right?

One Shot Two Ways #1

One Shot Two Ways #2

The first photo was taken head-on by a professional photographer (Key4Prints). I happened to catch the second photo from the bleachers at the exact same time… just as Bailey was contorting her body and snapping her mouth open mid-air in an attempt to catch her duck. While the professional shot is clearly a better photo, I kind of like the second shot because it helps you appreciate what a huge jump this was. Bailey ended up winning her division at this event with a 24+ foot jump!

Thanks for stopping by and, again, thank you to everyone that voted for Bailey in the photo contest!!!! (You can vote here: http://bit.ly/146NFcQ )

100 Miles in 21 Days!

I did it!!!  I completed my goal of 100 miles in just HALF the time I originally planned!  My 100 Mile iPad Mini Challenge officially began on July 18th and this afternoon at 4:45PM after just 21 days I breezed by the 100 mile mark on my treadmill.  Woohoo!

Miles since last post:  50.4
Days since last post:  9
Days until Deadline: 20
TOTAL MILES: 101.1 !!!

Matt helped me make a cool Excel graph that charts my daily miles, shows my total miles completed so far, and (my favorite part) predicts out my future miles based on my current pace.  I love graphs and charts and it’s been very rewarding to enter in my miles each day to see my progress.  Here’s the graph as of today:

100 Mile Challenge Graph (8/7/13)

So… this means that I can get an iPad Mini now!  Of course now that I’ve ‘earned’ it I’m a little worried that Apple is going to announce the release of an iPad Mini 2 right after I invest in the old model.  I’ve been doing quite a bit of thinking about this (I’ve had a lot of time to think on the treadmill!) and I have decided that I’m going to wait and purchase a new iPad Mini 2 when it comes out.  The release date has not been revealed yet so I will spend a little more time reading ‘real’ books until then! 🙂

So where do I go from here?  I am going to increase my original challenge since apparently 100 miles was too easy.  My new goal is to complete 150 miles by my original deadline of August 28th.  Full speed ahead!

Mediterranean Lamb Burgers

A few weeks ago we went grocery shopping with the intention of buying ingredients for our Guacamole-Chipotle Burgers but when we arrived at the meat aisle we discovered that our supermarket was having a sale on ground lamb.  We quickly abandoned our beef burger plans and instead decided to tackle a new recipe using the lamb.  After some quick iPhone-aided recipe searches we settled on Mediterranean lamb burgers with a spicy mayo sauce and a cucumber-mint topping.  Without further ado, here’s the recipe!

Lamb Burger

Mediterranean Lamb Burgers with Harissa Mayo and Cucumber-Mint Sauce

For the Harissa Mayo: (recipe from Chow.com)
1/4 cup Harissa*
1/2 cup Mayonnaise

For the Cucumber-Mint Sauce: (recipe from AllRecipes.com)
1/2 large Cucumber, peeled, grated and squeezed dry
3/4 cup Sour Cream
1 tablespoon Mint, choppedHomemade Harissa
1 teaspoon Red Wine Vinegar
1 clove Garlic, minced
Salt and Pepper, to taste

For the Burgers:
1 1/2 pounds Ground Lamb
1 tablespoon Harissa*
1/4 cup Feta, crumbled
1 teaspoon Salt
1/4 teaspoon Pepper
5-6 Hamburger Buns, cut in half lengthwise and lightly toasted

*Harissa is a Tunisian chile paste that can be purchased in tubes or cans in a good grocery store.  We couldn’t find Harissa in our local store so we used this Harissa recipe from Whole Foods to make our own.

Directions:

Start by making your condiments.  Make the Harissa Mayo by stirring together the Harissa and mayonnaise in a small bowl.  Make the Cucumber-Mint Sauce by mixing all of the ingredients together in a larger bowl and adding salt and pepper to taste.  Cover and refrigerate both sauces until you are ready to assemble your burgers.

Raw Lamb BurgersMake the Lamb Burgers by placing the ground lamb in a shallow bowl and spreading it out slightly.  Add in the Harissa and sprinkle the feta, salt and pepper evenly over the surface of the meat.  Carefully mix the ingredients into the meat with your hands.  (Avoid over-mixing the meat as this will make your burgers tough!)  Split the meat mixture into 5-6 loose balls (about 1/4 pound each).

Place the lamb “balls” on a plate and press down gently to flatten them slightly.  Form a small indent (about 1/4″ deep) in the center of one side of each patty.  Place the lamb patties, indent side up, on a preheated, oiled grill over direct high heat.  Close the lid and allow to cook for 6-7 minutes, then flip the burgers and let them cook for another 6 minutes.  Remove the burgers from the grill and let them rest, covered, on a plate for 4-5 minutes.

To assemble your burger, slather a liberal amount of the Harissa mayo on the bottom of the toasted burger bun.  Place the cooked lamb patty in the bun and top with a heaping spoonful of the cucumber-mint sauce.  Enjoy!

100 Mile iPad Mini Challenge: 49 Miles to Go!

Last Tuesday I challenged myself to run 100 miles in 42 days and I’ve been running like crazy ever since!  Wednesday will mark the end of week two of my challenge and I’m currently on pace to complete 100 miles in just 24 days!

Miles since last post:  31.3
Days since last post:  6
Miles until iPad Mini: 49.3
Days until Deadline: 29

I realize that my timing is sort of backwards with the whole fitness thing… most people would have started working out before getting married to get ready for the big day but I, on the other hand, waited until after our wedding to get back into a serious exercise routine.  In my mind the reasoning is very simple — there’s no way that I had time to run/walk 5 miles a day in addition to all of the DIY wedding projects, vendor coordination and planning that I needed to get done before the wedding.  Now that our wedding is over and life is returning to normal I feel like I have oodles of free time and I’m happy to spend some of it working out!  🙂

Oh yeah… I got new purple running shoes on Saturday because my old sneakers were woefully worn out.  Like ’em?

Seeing Double… A GSP House Guest!

Just before Christmas 2012 Matt’s parents rescued a beautiful German Shorthaired Pointer and named her Bella.  Prior to her rescue Bella was discovered by a forest ranger wandering around in a New Jersey state forest (in cold winter weather!!) and she was underfed and seriously in need of a loving family.  Lucky for Bella, Matt’s parents welcomed her into their home and she is now enjoying a comfortable, happy life with her new family!

Bella the GSP

Bailey and Bella are really similar in size and coloring.  We sometimes joke that Bella could be Bailey’s sister… after all, Bailey was the runt of a 10-puppy litter born just 30 minutes from the state forest where Bella was found!  Biological siblings or not, Bella and Bailey are great friends and we take care of Bella when Matt’s parents are out of town.  We have Bella this weekend and I had fun doing a mini photoshoot with the GSP girls.

This slideshow requires JavaScript.

As you can see, Bailey and Bella are in a constant competition to steal each other’s toys.  Today they were vying for the same orange squeaky toy.  Aren’t they cute?

We don’t know what Bella’s background is, but she definitely has good hunting instincts.  Today she discovered a monarch butterfly in my flower garden and spent quite a while stalking and pointing at it.  Bailey used to point at butterflies but seems to have lost interest in them… now she focuses on squirrels, groundhogs and birds!

As I write this post we’re watching TV in our home office with the two dogs.  Bailey is snuggled comfortably on Bella’s bed (because Bailey is a HUGE bed hog!) and Bella has generously decided that that’s OK and she is alternating between lying on the floor at Matt’s feet and curling up in an awkwardly tiny ball on Bailey’s very small bed.  What a good pup!  Soon we’ll put both dogs to bed so they can rest up for another fun day in the back yard tomorrow!

100 Mile iPad Mini Challenge!

After 205 days of streaking our old Schwinn elliptical machine is starting to fall apart.  We have taken this as a sign that it is time to retire the elliptical and invest in a more serious piece of fitness equipment… a treadmill!   After some online research we settled on a NordicTrack and our new treadmill arrived by truck at 9:20PM last Wednesday night (gotta love that “12-6” delivery window..!).  Undeterred by the late hour, we happily pushed, pulled and heaved the 350 lb. machine up a half flight of stairs and carefully maneuvered it into the spot that the elliptical had occupied in our little home gym.  After some minor assembly we were good to go!

My new toy!

Our new treadmill!

My workout routine has completely changed since the treadmill arrived.  Throughout the first half of July I had been faithfully sticking to my mile a day streak, but now over the past six days I’ve been averaging more than THREE miles a day!  I’m sure the novelty of the treadmill’s map-based workouts and HD video runs will wear off eventually, but for now I’m going to keep my extreme workout schedule going by setting a goal:

If I complete 100 miles on the treadmill by August 28th I can buy myself an iPad mini!

Why an iPad Mini, you ask?  After lugging three books along on our honeymoon (and reading all of them) I came to the realization that a tiny eReader capable of housing dozens of books would be a great investment.  I looked at various options and determined that an eReader that also happens to be an iPad sounds pretty awesome!  As for the origin of my August 28th deadline?  Easy.  We’ll be going to a hunting camp in central PA for Labor Day weekend and I hope to spend lots of quality time in a rocking chair on the porch reading books on my iPad mini!  🙂

So… 100 miles by August 28th.  Including the miles that I’ve put in since last Thursday, this leaves me with 35 days to complete 80.6 miles.  That’s about 2.3 miles a day.  Think I can do it?  I’ll be posting updates that look like this:

Miles since last post:  19.4
Miles until iPad Mini: 80.6
Days until Deadline: 35

Wish me luck!!
